Veal Cutlets

Ingredients: (Conversion Chart)

  • 1 pound veal cutlets
  • cup all-purpose flour
  • salt
  • pepper
  • 2 eggs, beaten
  • 1 tablespoon water
  • 1 cup dry bread crumbs
  • 2 tablespoons vegetable oil

Directions:

  1. Place flour in a bowl and season with salt and pepper.
  2. In a second bowl, whisk eggs with water and place the bread crumbs in a third, shallow bowl.
  3. Dip each veal cutlet in flour. Pat off excess flour, dip in egg and then bread crumbs, coating evenly.
  4. Lightly coat a skillet with vegetable oil and place over medium-high heat. Fry cutlets, until golden on both sides, about 2 minutes per side.
  5. Drain on paper towels. Chop into slices and serve.
