Tuna Burgers with Tomato Salsa

  • 4 1-inch thick slices crusty bread
  • 1 can tuna, packed in olive oil
  • 1 can white kidney beans (cannellini), rinsed and drained
  • teaspoon salt
  • teaspoon coarsely ground black pepper
  • 2 medium tomatoes, finely chopped
  • teaspoon salt
  • teaspoon coarsely ground black pepper


  1. Drain tuna, reserving 1 teaspoon olive oil. Place tuna in medium bowl. Add beans, 1 cup chopped basil, teaspoon salt, and teaspoon coarsely ground black pepper.
  2. With fork, mix until evenly blended and most of the beans are mashed. With hands, shape mixture into four 3-inch round patties.
  3. In nonstick skillet, heat reserved olive oil over medium-high heat until hot. Add patties and cook 6 to 8 minutes or until golden, turning over once.
  4. Meanwhile, in a small bowl, toss tomatoes with remaining teaspoon salt and teaspoon coarsely ground black pepper. Set aside tomato salsa.
  5. Toast reserved bread slices. Serve each burger on toasted bread slice topped with tomato salsa.
