Slow Cooker Lamb Stew

  • 2 pounds boneless leg of lamb, trimmed and cut into 1-inch cubes
  • 1 pounds medium white potatoes, peeled and quartered
  • 3 large carrots, peeled and cut into -inch thick slices
  • 4 stalks celery, sliced
  • 1 large onion, chopped
  • 1 14-ounce can reduced-sodium chicken broth
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 3 tablespoons chopped fresh parsley


  1. In a 6-quart slow cooker, combine the lamb, potatoes, carrots, celery, onion, broth, thyme, salt and pepper. Stir to combine. Cover and cook on low-heat setting until lamb is tender, about 8 hours. Stir in parsley before serving.
