Thai Chicken Coconut Soup

  • 6 cups low-sodium chicken broth
  • 1 teaspoon chopped, seeded Thai chili
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon chopped, peeled fresh lemongrass
  • 2 teaspoons grated lime zest
  • cup fresh lime juice
  • 4 tablespoons Thai fish sauce, divided
  • 2 boneless, skinless chicken breasts, cut into strips
  • 1 cup light coconut milk
  • 2 tablespoons chopped fresh cilantro


  1. In a medium saucepan, combine broth, chili, garlic, ginger, lemongrass, lime zest, lime juice, and 3 tablespoons fish sauce. Bring to a simmer over medium heat.
  2. Add chicken and coconut milk, and cook 3 minutes, or until chicken is just cooked. Season with remaining 1 tablespoon fish sauce and sprinkle with cilantro.
