  • 2 cups canned chickpeas, rinsed and drained
  • 1 pound medium cooked shrimp, peeled and deveined
  • 2 medium tomatoes, seeded and chopped
  • 8 basil leaves, chopped
  • cup olive oil
  • salt
  • freshly ground black pepper
  • 4 cups baby spinach


  1. In a large bowl, toss chickpeas, shrimp, tomatoes, basil, and oil. Season with salt and pepper to taste. Serve over baby spinach.
