Ingredients: (Conversion Chart)

  • 1 large English cucumber, peeled and sliced -inch thick
  • 3 medium tomatoes, halved and sliced -inch thick
  • 1 large onion, halved and sliced -inch thick
  • 2 ounces feta cheese, sliced
  • 8 olives, pitted and halved lengthwise
  • 2 tablespoons extra virgin olive oil
  • teaspoon salt
  • teaspoon dried oregano
  • 1/8 teaspoon ground red pepper

Directions:

  1. Arrange alternate slices of cucumber and tomato across a large platter. Scatter onion, feta and olives over top. Drizzle with oil. Sprinkle with salt, oregano and pepper.
