Peanut Butter Cookies

Ingredients: (Conversion Chart)

  • 1¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter
  • ½ cup peanut butter
  • 1 cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract

Directions:

  1. Preheat oven to 375°F. Sift together flour, baking soda, and salt. Set aside.
  2. In a medium bowl, combine the butter, peanut butter, ½ cup white sugar, and brown sugar and mix until smooth. Beat in egg, then stir in vanilla. Gradually blend in the sifted ingredients.
  3. Shape dough into 1-inch balls. Roll in remaining sugar. Place 2 inches apart on ungreased cookie sheets.
  4. Bake in preheated oven for 10 to 12 minutes. Cool slightly, and remove from pan.
