Pan-Roasted Lemon-Salmon Fillets

- 4 6-ounce salmon fillets
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 1 lemon, juiced
- 1½ tablespoons olive oil
- Preheat oven to 350°F.
- Season salmon fillets with salt, pepper and lemon juice, then drizzle with olive oil.
- Sear fillets in a large oven-proof sauté pan over medium-high heat, about 3 minutes per side. Place pan in preheated oven and bake 5 to 10 minutes, or until fillets are cooked through.
