Asian Beef Noodle Soup

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 4 cups water
  • 1 cup chopped carrots
  • 6 ounces frozen egg noodles
  • 2 teaspoons vegetable oil
  • 2 tablespoons soy sauce


  1. In a large saucepan over medium-high heat, saute meat and onion, about 5 minutes, or until meat is browned on all sides.
  2. Stir in garlic, ginger, water, carrots, and egg noodles. Bring soup to a boil, reduce heat to low and simmer until noodles are soft. Stir in oil and soy sauce.
