  • 8 cups diced apricots
  • cup lemon juice
  • 6 cups sugar


  1. In a large pot, combine apricots, lemon juice and sugar. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves.
  2. Increase heat to high, and bring mixture to a full rolling boil. Continue boiling for 30 minutes, stirring often.
  3. Transfer to hot sterile jars, leaving -inch headspace, and seal. Process in a boiling-water bath for 10 minutes.
