Crispy Pork Cutlet

Ingredients: (Conversion Chart)

  • 1 pound pork loin, cut into -inch slices
  • cup all-purpose flour
  • salt
  • ground black pepper
  • 2 eggs, beaten
  • 1 cup dried breadcrumbs
  • 2 tablespoons vegetable oil
  • 1 tablespoon water
  • Barbecue sauce for dipping

Directions:

  1. Place flour in a bowl and season with salt and pepper. In a second bowl, add 1 tablespoon water to eggs and whisk. Place breadcrumbs in a third, shallow bowl.
  2. Dip each pork slice in flour. Shake off excess flour, dip in egg, then breadcrumbs, coating both sides.
  3. Lightly coat a skillet with vegetable oil and place over medium-high heat. Fry cutlets until golden on both sides, about 2 minutes each side.
  4. Drain on paper towels. Serve with barbecue sauce for dipping.
